Whew! I'm almost done. I was blessed with a long-napping baby, so I was able to complete most of the baking by dinnertime. All this counterspace is luxurious after last year's baking. I had so much trouble with consistency, though--the very same batter would bake high and firm sometimes, soft and fallen the next, not to mention the two pans which came out only as "muffin tops." I saved those in a Ziploc. What do you think? Gingerbread trifle for Christmas eve?
God give me the strength to bake these last few batches without yelling at my family or having an accident. Let me be a credit to my husband at his workplace. Let him be respected at the gates. AMEN!

your consistency problem may be unseasonal weather..here we normally have -20 degrees C (about the same f) and tons of snow..instead warm weather NO SNOW>...the heat affected my wonderfully famous sugar cookies..i had to add so much flour they tasted like..well..flour..luckily the kids piled inches of frosting and they cant tell or dont care...
cant wait to see the finished product....and peace to you and yours....i would have dropped a pan or two and burnt a few dozens as well....i dont do so well on a deadline...

It sounds like your baking powder may be bad. There should be an expiration date on the can. I think you can also test it in water, it should fizz.

It's a reference to the end of Proverbs 31, in which God's ideal woman brings honor to her husband. I know it sounds corny to think I am bettering his career or workplace by baking muffins...but I think it's part of my job as a stay at home wife and mom.
