Canned pumpkin

I went a little nuts after Thanksgiving last year. My pantry had far too many cans of pumpkin and cranberry sauce! I made a triple batch of whole wheat pumpkin muffins. My kids will eat them if I put 3 chocolate chips on top, not a bad nutritional trade.

I had an odd amount of batter left in the bowl. I usually bake any extra in a disposable loaf pan instead of making a half sheet of muffins. It's easy to pull a loaf from the freezer for meal deliveries.

I like mixing canned pumpkin with cinnamon applesauce. My toddler loves it as a snack. I use 2 cups of applesauce to 1 can of pumpkin. It also makes a good topping for pancakes (sprinkled with nuts).

This Cooking Light recipe for Pumpkin-Walnut Focaccia is one of my favorite uses for canned pumpkin (albeit it doesn't use a lot of pumpkin): http://find.myrecipes.com/recipes/recipefinder.dyn?action=displayRecipe&recipe_id=1108231

I usually mix the dough in my bread machine and then take it from there.

You can easily omit the Gruyere or sub another cheese like Parmesan for a more budget conscious recipe. It freezes well, too!

Pumpkin dishes are my favorites! I'd love to see some samples of your best meal delivery menus. That's an area of hospitality where I really want to improve.

I put chocolate chips in these muffins too so that my children will eat them. :-)

I wish that we could purchase canned pumpkin here in New Zealand- you are soooo fortunate. We can buy canned pumpkin soup, but not plain canned pumpkin. I have to buy pumpkin, boil it up and make my own.

Ooh! I love pumpkin bread! Reminds me of Fall so much and the year I was pregnant with my first. Couldn't sleep very late towards the end so I would just get up and make pumpkin bread. So yummy! Love your blog! Elise

The simple things you never think about! I would never have thought of making a loaf of something instead of making a half sheet of muffins to finish up the batter. I always fill the empty cups with water so they won't scorch, but now I will be making loaves for freezing.

I use canned pumpkin to make pumpkin butter (I put a recipe on my blog once)--you cook it down slowly with some sweetener and spices, and use it on toast.

I put chocolate chips on top so my husband and I will eat them, lol!

And I love the idea of using the extra batter to make a loaf - will have to try that next time.

There is a wonderful pumpkin bread receipe from one of the Taste of Home publications that I love (and which freezes well!). :-)

I love pumpkin breads, but they only seem to taste "right" in the fall and winter...
