I am curious how your "interesting" (I am trying to be diplomatic!) menu went over last night. Tonight's pork chops sound much more palable to me! I love to put pork chops in my clay baker. I don't "doctor them up" at all - just pop in the baker with just some seasoning. I sometimes add a sweet potato to bake with them.
