Soup delivery

I love bringing food to people going through a rough patch.

My family doesn't mind, either. They usually benefit from a better meal than I would compose under normal circumstances.

Yesterday's reduced-for-quick-sale roast and gravy was shredded into a super-size vegetable soup, delivered with yellow cornbread and fresh pineapple salad.

That is my favorite kind of soup. My grandmother makes that kind and it is so yummy and comforting!

You would make a wonderful neighbor. I too make soup to take to family and friends who are a bit under the weather. I like to put the soup into a quart canning jar for easy transport. Most of the time I get the jars back when empty, but if I don't get the jar back it is not a big deal. I find that a quart of soup is plenty for 2 meals. I always take corn bread or crackers too.

No recipe!

This was a particularly beefy soup, as I had plenty of gravy in the crockpot.

I shredded the beef into the gravy with two forks.

Then I brought it to a boil with a can of chopped tomatoes, half a can of tomato paste, and one chopped onion.

To which I added half a bag of frozen peas and corn and chopped fresh carrots.

Simmer until vegetables are tender.

It turns out different every time!

Thanks for the recipe. I'm thinking this would work with cooked ground beef too and maybe add a bit of diced potatoes. Oh, I'm getting hungry now.

I like taking meals in to people too! It's so easy to just make double the recipe, and pass a dish along to someone in need. And when you are the one who is sick or just had a baby, its invaluable when people return the favor.

Your thrift store finds in the next post are great too!

Yum! Now I can't wait to get home and make dinner.

I'm so unorganized it can be difficult just to make a meal for my family sometimes, but whenever I have Board Meeting leftovers I share. Usually with my next door neighbors who are both in their 70's or with a homeless person as we did last week (and thank God the person behind me didn't mind my holding up traffic for a moment to hand him the food). I know God smiles at your hospitality and caring.

After receiving meals ourselves, we love to give meals too! I do something similar to what you do - soup, bread, fruit. It's wonderful to give and receive in this manner. . .

What a great meal for someone in need. I wish there were more people like you who cared to help someone in need.
