I looked for an online link to the classic Katherine Hepburn brownie recipe--guess what? It has flour! But the cookbook version I read had omitted the flour, as did I.
This was the only dessert with only crumbs remaining:
2 squares unsweetened chocolate
1 stick sweet butter
1 cup sugar (or
Splenda, or 1/2 of each)
2 eggs
1/2 tsp. vanilla
1/2 chopped walnuts
(I added 1 cup for bulk)
Melt two squares of unsweet. chocolate and 1
stick of butter in a saucepan. Remove from heat and stir in 1 cup of sugar. Add
2 eggs along with vanilla; beat like mad. Stir in 1/2 cup walnuts chopped in
fairly good size pieces. Now mix all that up. Butter a square pan and dump the
whole thing quickly into the pan. Stuff this pan into a preheated 325 degree
oven for 40 minutes. Let it cool for awhile. Cut into 1 1/2 inch squares and
dive right in.
My notes: cool completely before slicing. You may even want to refrigerate first, as the center filling was a little soft. Baking on parchment or waxed paper liner would help with removal of the inner brownies. Still couldn't believe this didn't have flour!

woah! I'm searching for the classic Katherine Hepburn recipe now, that intrigues me. How'd you know it existed? Have never heard of it...and why is it famous? I love the scene in a Hepburn/Tracy movie (Adam's Rib?) where the two of them raid the fridge for a midnight snack..."salad, melon, lamb, milk"...
I first saw it in a cookbook, then looked on the internet. Evidently Hepburn's friend and newspaper columnist asked her for the recipe. It's been reprinted many times since. The original is the same as the one I've posted, plus an additional 1/4 cup flour.

I enjoy your blog so much! I tried your marvelous brownies last night -- only substituted 3/4 c. fructose for the Spenda. I also added 2 t. coffee granules (picked up the tip from the Barefoot Contessa -- intensifies the chocolate flavor.) They were delicious!! Thanks so much ~ Dana
