Hmmm... my Mom used to make me egg sandwiches at home. Basically, she would make a thin omelet (usually one egg only) and put the egg between two slices of bread. It was my favorite lunch for school :)
Now, whenever I am short on time for dinner, I make a side dish of eggs. Basically make an omelet with green onions and it's great with steamed rice.
