Hot weather, cold breakfast

Forget about lavish travel brunches--I need a vacation from breakfast!

This morning it is pumpkin pie! We make them year round using about half the sugar called for in the recipe. For the "crust" I simply spray the pie plate w/Pam (generic), and sprinkle that w/either dry cream of rice or cream of wheat cereal. I figure with the pumpkin, milk and eggs it is a very healthy snack anytime - even for breakfast! Of course, this was made yesterday when running the oven for another purpose.

The ever-popular fruit salad, though I'm often lazy and only keep it to one kind and not a blend. Now that the kids are older (2, 4 & 5), I have given them long string and Cheerios and let them make their own long necklaces. They then eat them off the string (knotted carefully by me to prevent choking). I like to make hard and soft-boiled eggs from time to time on toast. An egg slicer makes perfect circles for the kids with fruit on the side. Breakfast burritos with scrambled eggs are always yummy; we make them along the lines of a cheese omlette because the kids don't care for it Mexican style. Bagels are new for us, they didn't like them before. And some days we just eat Teddy Grahams and other similar snacks. Why not, right?

Plain yogurt with honey and granola sprinkled on top is a favorite warm weather breakfast in our house. Along with fruit smoothies.

My very favorite breakfast is fruit of any sort, strawberries, banana, even pineapple and toast. I always keep cinnamon raisin bread in my freezer. So the toast, fruit, and a good cup of coffee gets me going in the morning. Hope your day is blessed. Roxie

Usually my favorite hot weather breakfast is a diet yogurt (always peach or cherry lol) and a granola bar. Simple and a good balance of carbs and protein. Not to mention no dishes to clean up :D.

cold cereal topped with fresh fruit and yogurt is a dandy hot weather breakfast. also cottage cheese and fruit or a fruit smoothie. hope it cools down soon. cb

Yogurt parfaits! The kids and I usually make a batch of granola and keep it in the pantry. I also keep frozen blueberries and occasionally strawberries in the freezer. Just layer up in a pretty glass or bowl!

What I had today was extremely boring but works - dry cereal (bought cheap of course) with milk and some fruit or raisins if I feel like it.

Other ideas: apple or banana with peanut butter, yogurt with fruit, peanut butter on toast. I always make sure to have some kind of a protein food so I'm not hungry again an hour later.

Homemade granola (a batch makes 10-11 cups, so the oven's only fired up once) with milk.

Fresh berries on yogurt with maple syrup (we're plain yogurt folks).

Orange Julius or strawberry smoothie.

One of our favourite is cereal with yogurt. We choose a high fibre cereal, weigh out the 1 serving portion and mix in a small yogurt. Sometimes we top it with blueberries.

If I want something more oatmeal like, I've a home-made muesli recipe that I put in the freezer in single portions. I mix it with 1/3 cup milk, microwave for about 45 seconds. I remove and add a yogurt. This recipe has flax seed, sunflower seeds, oatmeal, bran, etc. And is fairly inexpensive to make/assemble.

We've been talking about this a lot around our house, because I'm just tired of making breakfast some mornings and it is too hot to cook much.

The last two mornings we had strawberry cheesecake tart and some turkey bacon for breakfast. That involved a little cooking and some baking when I was making dinner the other day, but it made for a lovely breakfast.

Other things we do are smoothies, fruit salad, cheese and crackers and things of that nature.

Well, since it wasn't really hot this morning (we have the windows all opened) I made eggs, bacon & toast. But normal summer mornings (actually any normal morning) are cold cereal, toater waffles and/or fruit. The kids also like to eat cut up bananas with peanut butter.

It is chilly here in Kentucky this morning, so definitely not a hot summer morning to think about something cool. Fruit and a bagel or toast works for me when it is hot, however. Will your children eat the cottage cheese and watermelon for breakfast, too, or did you still have to make their usual fare? P

I love non-fat, plain yogurt with a packet of splenda, some fruit (either fresh or dried cranberries) and a little granola thrown on top. Yum! My absolute favorite summer breakfast is to take 1/2 a small cantelope and fill the hole in the middle with fresh blueberries. Then devour the whole thing (unfortunately, doesn't fit in the whole pregnant/diabetic thing so none of that this summer).

This is the time of year we indulge in cold cereal, though I never buy when it's over 10 cents/oz.
We also do granola if we can get around to making it in the roaster out on the deck (cooking outside keeps the house cool) and lots of fruit.
Smoothies for lunch, salads for dinner. Who wants hot food on a hot day?

a recent favorite of mine is the cereal bars from Trader Joe's, and I (gently) spread a chunk of cream cheese on top. It tastes sorta like cheese danish! yum. No cook, quick, and cool for those hot days.

We like to do breakfast shakes. This morning was bananas and peanut butter. A squirt of chocolate on the top and my 4 yr old thinks its the best.

Nonfat vanilla yogurt sprinkled with granola and drowned in fresh berries! It takes minutes to put together and everyone likes it. Also cottage cheese with berries, hard boiled eggs done well ahead of time, or dry cereal/milk and fruit on top or on the side....that would be my son's favorite. Homemade waffles with fruit or syrup, but the waffles made on the weekend and frozen for during the week--double a recipe. These are great ideas!

Waffles - make up big batches and freeze them. (you can do plain, pumpkin, blueberry - whatever!) Then you can just pop them in the toaster (or microwave - but they're not as good IMHO)

Serve with fresh fruit - yummy!

On baking days, I make extra muffins, breads, cinnamon rolls just for this reason. On the relatively cool days of summer, I bake different breads and muffins: cinnamon, lemon, banana, strawberry, blueberry, pumpkin, peach, etc., depending on what I have on hand and/or using whatever fruits are in season, and then stick extras in the freezer, preslicing the breads. Then when you wake up and it is already 80 degress outside, it is easy to thaw in the microwave if you haven't taken them out of the freezer the night before. Carrot cake (minus a ton of frosting) also works as does pumpkin pie and even chocolate zucchini cake on a rare occasion. I have a recipe for a killer summer squash cake that tastes like spice cake but is moister and higher in vitamins, and that works well, too. I'm lucky in that my kids don't like frosting, so using vegetable cakes plain or with a very light dusty of powdered sugar makes breakfast seem like a huge treat!

Our favorites summertime breakfasts include fruit salad, fruit & yogurt, string cheese (or cut up block cheese) w/apples, or peanut butter & apples. Also, my boys love the ever-popular PB & J - anytime!

I get the Gogurt sticks and toss them in the freezer and the kids love them (plus they last longer that way too!).

If you can trust your egg source:

A banana milk shake made with one banana, 1tbsp dried milk powder, 1egg, fill up with icy cold milk and a good scoop of real ice cream. I sometimes add a small tbsp of vegetable oil too if I feel the child needs the extra boost. It usually goes down a treat! (Perhaps made out of the child's veiw if s/he is picky!) Gill.

I put 6 eggs in the electric tea kettle at night, cover with water and push the button down. By morning I have perfect hard cooked eggs.

If you're worried about them not being refrigerated just allow about half an hour to cook.

It doesn't heat up the kitchen at all.

Rinse before making tea water, of course :)

Yogurt and fruit - esp. berries. Leftover pizza (cold). Cold cereal. Nothing too different - just not much with the hot cereals or grits or anything.

It's not hot here in Chicago at all yet, though. Monday was hot, then we dropped 40 degrees. Coldest May I can remember!

We eat whatever is in the house, hot or not: Leftovers, cold cereal, toast...

But I'm commenting to say thank you to Laurel for posting about green smoothies this month. I have been making them almost daily based on her recommendation.

THEY ARE PHENOMENAL and YES, CRAVE!

I load mine with reduced-price baby spinach (1 bag/.99 makes 4 smoothies), handful of frozen strawberries, 1 TBS. flax, 1 TBS walnuts or almonds, and 1/2 banana (for creaminess), sometimes orange or grape juice, + water to thin.

Big energy + reduced cravings for junk. I guess it's the iron (spinach) + vit C. Funky color, but tastes so good. Slow and sippy like a milkshake.

Wait, I'm supposed to make morning meals? ;-)

I tend to bake muffins and keep them in the fridge or freezer. Easy to pull out and pop in the microwave.

Sometimes I have homemade granola that I just sprinkle liberally on top of yogurt.

And of course, there are always Poptarts and cold cereal. Or the donut shop down the road.

Cut a kiwi at one end and dig out the goodies with a spoon (with skin on), with a side of sliced peaches or watermelon - The kids love diggin out the goodies!
Meredith - Girlfriend, you must get you a juicer - We got a used one and we love it - Juicing in the morning is like a wonderful welcome to a warm morning - Carrots, Pineapple and Apples are the best!
Although they get orange teeth at the end when they drink with a straw, it feels them up and keeps them 'regular'...

Actually, although it's a hot breakfast, I love my Easy Huevos Rancheros recipe (on my blog) because it's quick, inexpensive, and I like Mexican food when it's hot out!

I think my pregnancy thermostat is going through the roof, though, cause the idea of firing up the skillet makes me sweat : )

I do a lot of smoothies.
1 cup almond/rice milk
1 cup frozen blueberries (Costco bag)
1 cup other frozen fruit
1 frozen banana
2 tbsp ground flax seed
1 scoop soy protein powder
1 serving frozen spinach or fresh kale

Blend blend blend.

I often get into a battle with my blender though because it doesn't suck down the frozen stuff like it should sometimes. It gets irritating.

Interesting to read everybody's breakfast choices, but I wanna know---how hot is it when you wake up? I live deep in the heart of dixie and we keep our central air-conditioning set on 68 degrees. We live in a very small house and we discovered years ago that keeping it set like this uses less electricity than constantly adjusting it all day. It helps the refrigerator to run more efficiently, too. I didn't mean to hijack the topic but when I think of a "cool" meal, I'm usually wanting just salads and sandwiches for supper!

yogurt with barley! Take some plain yogurt, add some cooked barley (or you can soak it overnight and rinse...but that might be less nutritious). Anyway, add some cut fruit and a little sugar. It's so good.

Sounds like you got some good ideas! I don't ever pretty much cook breakfast. We eat cold cereal, peanut butter toast or yogurt if we have it. I like to take a tub of plain yogurt and add half a pound of sliced strawberries and some honey for sweetening. Serve with grape nuts or granola.

We like Trader Joe banana waffles, toasted twice, with a schmear of p.b, a drizzle of honey, a flurry of cinnamon topped with raw almond slices. Accompany with ice cold milk and a cup of hot tea. Mmmmmmm.

Today I found a wonderful deal on some delicious and beautiful strawberries. They're not the super sweet ones grown locally (which cost up to 7 dollars a pound!) but they're yummy anyway. Two pounds of US grown strawberries for 4 dollars! Hooray!

I'm a little late on this comment, I know, but still thought I'd share...

I love slicing up fruit and serving it with this simple fruit dip:

Mix 8 oz whipped cream cheese, one 7 oz jar of marshmallow creme, one tbsp of orange juice, and one tbsp of orange zest. Whip together and chill. Mmmmm! So yummy. Also makes a great light snack for company =)
