Surviving A Camp Out With Guests

Well, crouching in our tornado "safe spot" for most of the afternoon put a dent in my last minute preparations, but I'm finally finished.

I made an incredibly good batch of brownies, substituting Splenda for sugar in the classic Kathryn Hepburn no-flour recipe. I put together a big domed tray of snacks for the late arrivals: a garlic herb cheeseball, crackers, grapes, strawberries, celery sticks and some brownie bites.

After spritzing the bathrooms one more time, I'm collapsed here at the computer waiting for the last wave of guests. Now all I have to do is relax and enjoy the weekend.

Let's just hope I can lift my pregnant body off the air mattress in the morning.

Meredith,
When you get a chance (after your company leaves and you have crashed for several days) would you send me the no-flour brownie recipe or a link to it. My mother-in-law has to eat gluten free so that would be a perfect recipe to fix for her. I did a search for it on the web but couldn't really find a no-flour recipe. Thanks.

I would love the no flour brownie recipe too after you've had some time to recover from company. My best friend needs to stay gluten free, loves chocolate and her birthday is coming up in a month. Also what kinds of things go in an herb cheese ball? It sounds like it has the potential to be both cheap and lo-carb - my favorite qualities for any recipe. Thanks. -Melissa

I am so glad that you and your family are all right! I was praying for you and everyone else in the Nashville area that night. The tornadoes skipped our small pocket in Georgia but hit hard where my son lives. He's okay, though.

Melissa, the garlic herb cheeseball was a last minute creation. I had half a bar of cream cheese and half a package of Athenos crumbled feta with garlic and herbs (these are almost always on sale and often free with a coupon!). I whirred them in the food processor to combine, rolled them into a ball in waxed paper, and then rolled the whole outside in a mixture of chopped parsley and cilantro--the only two herbs I had on hand. It made a pretty green ball and a tasty snack. I was going to take a photo for the blog, but everyone ate it before I grabbed the camera.
